Honey Almond Pound Cake with Macerated Berries - serves 4
For the cake, follow instructions on the backside of the Honey Almond Cake box.
1 cup strawberries, cored and quartered
1 cup blueberries
1 cup raspberries
2 teaspoons sugar
1 teaspoon lemon juice
1 tablespoon orange liqueur
In a large bowl, sprinkle sugar over the berries, then add lemon juice and orange liqueur. Stir to combine. Cover with a piece of plastic wrap and leave at room temperature for 1-2 hours. After an hour, the berries will release their natural juice and become slightly syrupy.
Serve a slice of pound cake with 3-4 tablespoons of berries on top and an optional dollop of whipped cream.
